My Story

We drove along the coast of Maine headed towards Monhegan Island. I was 8 years old. We stopped at a roadside restaurant for lunch. I ordered the linguine with lobster sauce. My first bite put me in a place I had never been before. I didn’t know that food could do that to you. I felt complete, I felt whole. I felt transported to a place that transcended time. I felt like I never wanted to leave that restaurant. The taste of that dish still lingers on my tongue and in my heart.

On my journey to find that feeling again, I did an apprenticeship and became a chef in Switzerland. I worked in many 5 star hotels, Michelin star and 18 point Gault et Millau restaurants. I cooked classic French, Italian, Swiss, and Asian fusion cuisines. I ran kitchens for bustling restaurants that were full in the off seasons. I have come close to tasting that feeling again from when I was 8. Perhaps it was the timing, my young palate, the sea air, the presence of both my parents, but I still have not found it. I will, however, continue to search.
